Coconut Orange Jumbles
3/4 c. Shortening
1-1/4 c. Sugar
2 Eggs
1 c. Shredded Coconut
2-1/2 c. sifted Flour
1/4 t. Salt
1/2 t. Baking Soda
3/4 c. Orange Juice
3 T. grated Orange Peel
Preheat oven to 425-F. Cream shortening and sugar. Beat in
the eggs and then the coconut. Sift together the flour, salt,
and baking soda. Add the sifted ingredients to the creamed
mixture alternately with the orange juice. Beat smooth after
each addition. Drop teaspoonfuls onto an ungreased cookie sheet.
Sprinkle with a little coconut and orange peel. Bake 10 to 12
minutes.
