Chewy Ginger Cookies

3/4 cup shortening
1-1/4 cups sugar, divided
1 egg
1/4 cup molasses
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cloves

In a mixing bowl, cream shortening and 1 cup sugar. Add the egg, 
molasses and vanilla; mix well. Combine dry ingredients; add to 
creamed mixture and mix well. Roll into 1-in. balls; roll in 
remaining sugar. Place 1-1/2 in. apart on ungreased baking sheets. 
Bake at 375 for 10 minutes or until lightly browned. Cool on wire 
racks. Store in an airtight container.
