2 slices bacon
8 cups shredded cabbage
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vinegar
2 tablespoons wat
Cook bacon in large skillet until crisp. Remove and reserve. Add remaining
ingredients to drippings in skillet. Cover tightly and cook over low heat,
stirring occasionally, about 20 minutes, until cabbage is tender-crisp. Serve
in bowl, top with bacon.

6 cups fozen cubed hash brown potatoes
3/4 cup chopped green pepper
1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
6 eggs
1/2 cup shredded cheddar cheese
In a large skillet over medium heat, cook bacon until crisp. Remove bacon;
crumble and set aside. Drain, reserving 2 tablespoons of drippings. Add
potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for
2 minutes. Cover and cook, stirring occasionally until potatoes are browned
and tender, about 15 minutes. Make six well in the potato mixture; break one
egg into each well. Cover and cook on low heat for 8-10 minutes or until eggs
are completely set. Sprinkle with cheese and bacon.

6 medium potatoes -- peeled
2 tablespoons melted butter or margarine
1 tablespoon flour
1/2 teaspoon salt
1/4 teaspoon dill weed
1 cup milk
Cook potatoes in boiling salted water until tender; drain.
Meanwhile, blend together butter and flour in small saucepan. Add salt, dill
weed and milk. Cook, stirring constantly, until mixture comes to a boil. Pour
over hot potatoes.

3 cubes beef bouillon
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano -- crushed
1 cup frozen green beans
Brown ground beef in a kettle; drain off excess fat. Add remaining
ingredients, except green beans. Bring to a boil; reduce heat, cover and
simmer 15 minutes. Add green beans and continue simmering 15 minutes
more.

1/2 cup light brown sugar
4 tablespoons light corn syrup
2 cups water
1 teaspoon vanilla extract
1 teaspoon imitation maple flavor
Combine sugars, corn syrup and water. Stir until dissolved; bring to a boil.
Cover and boil gently 10 minutes. DO NOT STIR. Remove from heat, cool slightly.
Add vanilla and imitation maple flavor. Stir only until mixed. Makes 1 quart.

Irish Soda Bread

6 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
3 tablespoons cornstarch
2 teaspoons sugar
1 teaspoon salt
2 1/2 cups buttermilk
Preheat oven to 375 degrees. Add all of the dry ingredients in a large
bowl and mix very well. Pour all the buttermilk into the bowl at once and
stir, using a wooden spoon, just until a soft dough is formed. Do not try
to make it smooth at this point. Pour the contents of the bowl out onto a
plastic counter and knead for a minute or so until everything comes
together.
Divide the dough into two portions and shape each into a round loaf,
pressing the top down a bit to just barely flatten it. Place the loaves
on a large ungreased baking sheet. Sprinkle some additional flour on the
top of each loaf and, using a sharp paring knife, make the sign of the
Cross in slashes on the top of each.
Allow the loaves to rest for 10 minutes and then bake on the middle
rack of the oven for 40 minutes, or until the loaves are golden brown and
done taste.
Cool on racks.

Irish Soda Bread with Raisins

2 tablespoons brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons butter or margarine
2 eggs
3/4 cup buttermilk
1/3 cup raisins
In a bowl, combine flour, brown sugar, baking powder, baking soda and
salt. Cut in butter until crumbly. Combine 1 egg and buttermilk; stir
into flour mixture just until moistened. Fold in raisins. Knead on a
floured surface for 1 minute. Shape into a round loaf; place on a greased
baking sheet. Cut a 1/4-in-deep cross in top of the loaf. Bake at 375
degrees for 30-35 minutes or until golden brown.

1/4 cup lime juice
1 quart lime sherbet -- softened
2 liters white soda
lime slices
In a punch bowl, combine citrus drink, limeade, sugar, lime juice, and
sherbert. Stir until smooth and sugar is dissolved. Add soda; stir to
mix. Float lime slices on top of punch. Serve immediately. Makes 1
gallon

Pineapple Tapioca Dessert

1 cup minute tapioca
6 cups water
1/2 teaspoon salt
4 cups brown sugar
2 teaspoons vanilla
1 1/2 cups Grapenuts cereal
2 cups crushed pineapple
1 cup chopped nuts
Mix tapioca, water and salt; bring to boil and cook 5 minutes, stirring
constantly. Remove from heat, add brown sugar and vanilla. Fold in grapenuts,
pineapple and nuts, set in cold place until real cold. Do not refrigerate.
Serve with whip cream. Place cherry on top. This is very rich. Use small
servings.

NOTES : The directions state "Do not refrigerate" so I have never really
figured out where that "cold place" is!

4 cups rhubarb -- cleaned and sliced
4 cups sugar
1 package strawberry gelatin powder
Combine rhubarb and sugar in heavy saucepan. Boil for 15 minues and take off
heat. Stir in one regular size strawberry jello. Pour into clean, sterilized
jars. Refrigerate when cool.

Saturday Potato/Cheese Soup

4 cups cubed peeled potatoes
2 cups water
2 teaspoons salt
1/4 teaspoon dry mustard
1/8 teaspoon pepper
4 slices bacon -- chopped
1/2 cup chopped onion
3 cups milk
1 cup shredded Cheddar cheese
1 tablespoon parsley flakes
Cook potatoes with water, salt, dry mustard, and pepper in larege saucepan until
soft; do not drain. Mash potatoes.
Meanwhile, cook bacon and onion in small skillet until bacon is lightly borwned
and onion is soft. Add to potato mixture along with remaining ingredients.
Cook over low heat, stirring frequently, until thoroughly heated and cheese is
melted; do not boil. Makes 2 quarts.

1 cup Grape Nuts
1 cup raisins
1 cup prunes and/or dates
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup nut meats
Dissolve jello in hot water, then add Grape Nuts. While hot, add sugar and other
ingredients. Cuit prunes (or dates) in large pieces, both may be used if
desired. Add nuts last. Pour in a 9" x 9" pan and place in refrigerator for
3 hours. Add a spoon of whipped cream on top of each serving.
