Amount  Measure       Ingredient -- Preparation Method

1      20 ounce can  Pineapple -- tidbits
3                    egg yolks
2      tbsp          sugar
2      tbsp          vinegar
1      tbsp          butter
1      16 ounce can  cherries -- pitted
3                    oranges* -- peeled and diced
2      c             marshmallows -- miniature
1      c             whipping cream


Drain pineapple; reserve 2 tbsp. syrup.  In top of double boiler beat 
egg yolks slightly; add reserved syrup, sugar, vinegar, butter and 
salt.  Cook and stir over hot water till sauce thickens slightly and 
barely coats a spoon, about 12 minutes.  Cool to room temperature.  
Combine fruits and marshmallows; mix gently with sauce.  Whip cream; 
fold into salad.  Cover; chill 24 hours.

Before Serving: If desired, top with orange sections and mint leaves.

*A can of mandarin oranges may be substituted.
