1/4 cup sugar
1/2 teaspoon cinnamon
6 baking apples -- pared and cored
2/3 cup sifted flour
2/3 cup sugar
1/4 teaspoon baking powder
1/8 teaspoon salt
1 large egg -- slightly beaten
3 tablespoons melted butter
1 teaspoon vanilla
Combine 1/4 cup sugar with 1/2 teaspoon cinnamon. Roll each apple in the cinnamon sugar
and place in buttered custard cups. Spoon remaining cinnamon sugar in centers of apples.
Sift together flour, 2/3 cup sugar, baking powder and salt - set aside. Combine egg, melted
butter and vanilla. Add to dry ingredinets. Beat well. Place 2 tablespoons of the batter over
each apple. Bake at 375-400 degrees F. until apples are tender.

Beef Rolls Polish Style

2 pounds sirloin tip roast, trimmed -- cut 6 thin
6 large hard boilied eggs -- halved
6 strips bacon -- halved
1 medium onion -- sliced
3 teaspoons mustard
1 teaspoon marjoram
3 tablespoons potato or corn starch
1 cup warm water
1/2 cup sour cream
2 tablespoons Maggi seasoning**
2 tablespoons vegetable oil
2 teaspoons fresh green parsley
1 teaspoon salt
1/2 teaspoon pepper
12 wooded toothpicks
Mix cornstarch with salt and pepper - set aside.
Cut each steak in half, pound lightly. On each piece sprinkle marjoram, spread 1/2
teaspoon mustard, place 1/2 strip bacon, put 1/2 hard boilied egg, cover with onion and roll
beef around it. Fasten with toothpick.
Dredge each roll in mixture of starch, salt and pepper. Heat the oil. Brown each roll
quickly (on both sides) in hot oil.
In the meantime dissolve 1 tablespoon Maggi seasoning in 1/2 cup warm water. Add to
skillet, cover tightly, lower the heat to low and cook for approximately 20 minutes.
While remaining water is still warm, dissolve 1/2 cup of sour cream in it, add 1 tablespoon
Maggi seasoning. Sauce should be of smooth consistency.
After 20 minutes, turn rolls around and add sour cream sauce, carefuly mixing with all
liquids in the skillet. Raise heat for a moment to a light boil and immediately lower to simmer.
Cover tightly. Cook for addtional 20 minutes, turning rolls occasionally.
Remove from heat, discarding toothpicks. Arrange on a warmed dish, with remaining sour
cream sauce on top. Sprinkle with freshly chopped parsley. Serve on bed of mashed
potato.
**beef cube can be used in place of the Maggi seasoning. according to directions only one
cube is needed.

2 large eggs -- well beaten
1 1/2 cups milk (scant)
2 tablespoons melted shortening
2 cups sifted flour
3 tablespoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 cup blueberries
Combine eggs, milk, and shortening in mixing bowl. Add flour, baking powder, salt, and
sugar until smooth. Fold in blueberries. Pour by spoonfuls onto hot and lightly greased
griddle. Fry until bubbles burst. Turn and fry on other side until golden. Makes about 15
medium cakes.

3 tablespoons light corn syrup
1/4 teaspoon salt
1 cup milk
1/4 cup butter or margarine
1 teaspoon vanilla
Combine melted chocolate, sugar, syrup, salt, and milk. Cook over low heat, stirring until
sugar dissolved. Cook to soft-ball stage (232 degrees). Remove from heat; add butter and
cool until just warm (110 degrees). Add vanilla and beat until mixture is of spreading
consistency. This recipe frost tops and sides of two 9 inch layers. Can also use for
brownies.

Mix cornstarch and suar; add chocolate and salt. Add water and cook until mixture thickens.
Remove from heat and add butter and vanilla. Spread on cake while hot for a glossy frosting
which remains soft and smooth.

Cook corn meal and water, stirring until batter becomes stiff. Remove from heat, stir in milk,
oil and onion. Gradually stir batter into eggs. Sift dry ingredients together then blend into
corn meal batter. Drop by teaspoonfuls into hot oil and fry until golden brown.

Layered Corned Beef Bake

4 medium potatoes -- sliced
4 cups coarsely chopped cabbage
3 tablespoons margarine
2 tablespoons flour
1/2 teaspoon salt
1 1/4 cups milk
2 tablespoons mustard
12 ounces canned corned beef -- chilled and sliced
paprika
Cook sliced potatoes in salted water about 15 minutes. Add cabbage to potatoes and cook
5 minutes more. Drain and set aside. Melt margarine in pan - add flour and cook until
bubbly (making a roux), add milk, and salt. Stir in mustard. Add drained potatoes and
cabbage mixture. Turn 1/2 vegetable mixture in casserole. Top with corned beef slices.
Pour rest of vegetables over corned beef slices. Sprinkle with paprika. Bake at 350 degrees
25-30 minutes.

Six Layer Casserole

5 medium potatoes -- sliced
1/2 pound hamburger
2 medium onions -- chopped
1 cup raw rice
1 can peas
1 can tomato soup
salt & pepper -- to taste
Butter casserole dish and layer in order given. Season to taste and add at least 2 cups water.
Bake one hour at 350 degrees. Check to make sure that there is enough water during
baking, or rice will stay hard. Also, at the end of one hour, check to make sure casserole is
done by inserting fork into center. Potatoes will be soft and rice will be plump.

1/4 teaspoon Worcestershire sauce
1/4 teaspoon marjoram -- crushed
1/4 teaspoon basil -- crushed
1/8 teaspoon pepper
1/8 teaspoon thyme -- crushed
1/8 teaspoon savory -- crushed
4 tomatoes
1 large egg
1 tablespoon milk
1/4 cup flour
2/3 cup dry bread crumbs
1/4 cup plus
1 tablespoon vegetable oil
fresh basil or parsley for garnish -- optional
Beat cream cheese. Add next 9 ingredients and beat well. Refrigerate at least 2 hours or
overnight. Remove mixture about 10 minutes before using.
Cut off top and bottom from tomatoes. Cut them into 16 slices ( about 3/8" thick). Spread 2
tablespoons cheese mixture on 8 slices and top it with remaining slice. Dip each side in flour,
then egg and milk, and then in bread crumbs. Fry in oil over medium heat for about 2 minutes
on each side, or until browned. Drain on paper towel.

3/4 cup milk
1/4 cup cider vinegar
1 3/4 cups flour
1 1/2 teaspoons baking soda
1 teaspoon cream of tartar
3/4 teasspoon salt
3 tablespoons butter -- melted
1/4 cup flour
Mix together milk and vinegar. Sift together 1 3/4 cup flour, baking soda, cream of tartar,
and salt. Add to milk mixture. Mix. Add butter. Beat 50 strokes. Place dough on lightly
floured board. Knead in remaining 1/4 cup flour. Pat dough 1/2" thick. Cut into 2 3/4"
rounds. Fold each round in half and press lightly. Place on greased baking sheet. Bake at
450 degrees for 10 minutes. Reduce heat to 400 degress; bake until light brown - about
8-10 minutes. Makes 8 biscuits.
